Shrimp and Grits and the Itsy Bitsy Spider!

Shrimp and Grits. Yum! Such a great meal and something I enjoy eating, but don’t usually make it at home…until now.


I guess this recipe should be called Shrimp & Quinoa . What is quinoa you might ask? It is similar to rice, or couscous in size and texture, but it’s not rice or a pasta. It is similar to a grain. “Technically quinoa is not a true grain, but is the seed of the Chenopodium or Goosefoot plant. It is used as a grain and substituted for grains because of it's cooking characteristics.” ß Obviously I stole that from a website…Anywho, enough of the technical stuff. It’s delicious. I eat this in place of couscous, rice, and grits. It is very high in protein and is great eaten by itself or mixed in dishes where you would normally put couscous, rice or grits. The other night I decided to make shrimp and grits, but thought, hey, I’ll use quinoa instead of the grits. I used this recipe of Lemon-Garlic Shrimp and Grits and it was wonderful!

Anyway, enough cooking. On to my favorite subject of all time. Mac. He has been growing so much, and becoming more and more of a little boy everyday. It is kinda sad. I don’t like how he can communicate with me and wants to be independent. I want him to be a little 8 lb 5 oz baby again! He just went in for his 15 month checkup. 15 months…are you kidding me? Everything was wonderful. Still in the 50th percentile for height and weight. 24 lb 2 oz and 31 inches long. His head is still large. 95th percentile. Big brain perhaps? Hopefully so! Thankfully, his head doesn’t appear to be too big for his body or anything…He has started repeating all sorts of words. His normal vocabulary includes: mama, dada, nana, baa (bear), cookie, cracker, juice, shoe, huh? and uh-oh. He has randomly said others but those are his consistent ones. He will say every word except mama on command, when he is in the mood. I am convinced he knows how much I like hearing him say mama, so he won’t say it. Usually he says it when its just me and him in the car and no one can witness…ugh. Oh well! I know he can say it so I am ok with that. He amazes us every day. Today, I was singing the itsy bitsy spider and he started to do what I thought was the “more” sign. Then as I kept going he did a motion for the “wash the spider out” line. I was like….interesting, so I kept going and when we got to the end, he was rubbing his fingers together again. Then he started clapping and said “yeah” ha! It was hysterical. So we did it again and again. I had no idea he knew the hand motions. It was so cute! Anyway, this weekend is full of nothingness and I love it! I can’t wait to spend the weekend with Mac figuring out what else that silly boy knows!
